Savory Beef Stew
This easy stew recipe for the stovetop or
slow cooker is delicious, and sure to please! Serve over mashed
potatoes, noodles, or rice, with a green or fruit salad and
hearty bread on the side. Add vegetables to this recipe if you
like (potatoes, carrots, artichoke bottoms, parsnips, green
beans...), or keep it simple as written here.
Suitable for entertaining.
Preparation time: less than 30 minutes
Cooking time: 2 hours (stovetop) to 4
hours (slow cooker)
1.5 - 2.0 pounds grassfed beef stew meat
(or cut round steak or chuck into 1” pieces)
4 Tbsp. butter
3 small, or 1 large yellow onion, peeled
and chopped
2-4 cloves garlic, crushed
1/2 cup fresh parsley, chopped
salt and pepper to taste
1 6-oz. can tomato paste
1 cup dry white wine (cheap drinking wine
is better than cooking wine)
1/2 tsp. dried dill weed
1 Tbsp. lemon juice
In a heavy skillet, melt butter. Add stew
meat and brown thoroughly. Remove meat to heavy, large saucepan
or slow cooker.
Saute the yellow onion, garlic, and
parsley until onions are translucent. Add vegetables to meat,
along with salt, pepper, tomato paste, and white wine.
Simmer, covered, for about 1 1/2 hours on
the stovetop. (Or, in slow cooker, cook on HIGH for about 30
minutes, until dish is simmering, then turn down to low and
simmer for another 3 hours).
About 15-20 minutes before serving, add
dill weed and lemon juice.
