Artichoke Spread
Believe it or not, artichokes may be
raised in southeastern Wyoming. Raise the variety
“Imperial Star”, available from Johnny’s
Seeds, and be sure to “cold treat” your plants for
5 weeks in the spring to simulate winter.
8 oz. cream cheese
14-15 oz. can of artichoke bottoms,
halves, whole, or quartered, packed in water
2 oz. piece of Parmesan cheese
2-4 cloves garlic, depending on size and
taste preference
salt and pepper
1 Tbsp. dry white wine
juice of 1/2 lemon
pita chips or crackers or crusty French
bread
Cut the Parmesan cheese into smaller
pieces, and place into bowl of food processor. Add garlic
cloves and blend until fine. Add remaining ingredients and
blend until smooth. Serve with crackers, crusty bread, or pita
chips (cut whole wheat pitas into wedges and toast gently in
the oven).
