Steaks Premium Tenderloin (Fillet Mignon) * Ribeye * New York Strip * Sirloin * Economy Chuckeye Skirt Flank * Small Round (Top or Eye)	Regarded as the most tender cut of beef available. The cut by which beef is judged. Need we say more? Top loin steak, also called Delmonico or strip steak. Ours is boneless. Great for grilling. A good premium steak for the family, great for grilling, fajitas, and more! Cut from the Chuck, this steak is very flavorful, but chewier than the premium steaks. Marinate for best results. See our recipes section for marinades. Similar to the Chuck in quality. Marinate first, slice thin. Great fajita steak. Similar to Chuck and Skirt in quality. Roasts Chuck Roast * Sirloin Tip Roast * Brisket	The standard “pot roast”. Great every time. A wonderful cut for pot roast and other recipes. Chef Paul Pellegrino says our sirloin tip, “can’t be overcooked.” Cook as a pot roast, or make awesome homemade corned beef brisket (without additives).
Ground Beef Ground Beef * Ground Beef Patties * Sweet Italian Sausage *	Packages are approximately one pound each. Packages are approximately one pound each, with three patties in each package. Made from our ground beef, a “sweet” not “spicy” version of this perennial favorite. All of our ground beef is lean, although we are unable to advertise a percentage because testing is prohibitive at our size of production.
