Top loin steak, also called Delmonico or strip steak. Ours is boneless. Great for grilling.
A good premium steak for the family, great for grilling, fajitas, and more!


Marinate first, slice thin. Great fajita steak.

The standard “pot roast”. Great every time. Boneless or bone-in.
A wonderful cut for oven roast. Chef Paul Pellegrino says our sirloin tip, “can’t be overcooked.”
A classic oven roast. Sliced thin, makes great roast beef sandwiches.
A small roast, excellent as an oven roast.
Single muscle cut. Not my favorite as an oven roast, but has many other, great uses.
Cook as a pot roast, or make awesome homemade corned beef brisket (without additives).

Made from our ground beef, this is a perennial favorite for spaghetti sauce, pizza, and lasagna.  
     Also makes great sausage patties and meatballs.

All of our ground beef is “lean”, although we are unable to advertise a percentage because testing is prohibitive at our size of production. Some extra fat is added for our sausages so they will be tasty, and not dry. Even with the added fat, our sausages are leaner than most.

Meaty shank bones, excellent for making delicious, nutritious beef stock.
Bone-in ribs are great braised and BBQ’d, also make a great addition to soup stock.
